For two years, he cooked with the Bordeaux chef Jean-Marie Amat before becoming head chef at the restaurant La Chamade in Bordeaux, where he earned a Michelin star at the age of 27. In 1996, he chose to return to his roots, taking over the Hôtel de France in his native village. In this film in Gascon, Miquèu Carrère talks about his peasant cooking, the flavors of his childhood, the demands of his profession, his cookbooks, and now, in retirement, his new passions: gardening, sculpture, writing, and even wood pigeon hunting.
